제 129 날


My Coconut Oil of Choice

I'm experimenting with making zucchini fries this evening. I picked up a few In-n-Out burgers for dinner and I noticed that I had one lonely zucchini left on the kitchen counter. That's what prompted my culinary inspiration.

I like doctoring up burgers with avocado slices as well. It makes the meal more interesting and healthier as well, IMO.

I'll let you all know how the LC fries turned out later. They smell good. I can tell you that much! :-)

Update: The fries were a little too fried. I think I cooked them for slightly too long. Oh well. At least the apartment didn't burn down! :-)

9:00 am

+ The New Wowee Zowee Meal Replacement Shake - 2 oz of organic heavy cream, 3 oz of purified water, 2 scoops of natural vanilla whey protein powder, 1 scoop of Orac Energy Greens, 1 tsp of organic instant coffee, a pinch of pure stevia, and 1/4 tsp of Also Salt)

12:00 pm

+ leftover shrimp with sauteed spinach and onions

+ a tbsp. of organic coconut oil

3:30 pm

+ a shot of organic espresso

7:45 pm

+ an In-n-Out 3x3 - three hamburger patties, three slices of cheese, grilled onions and two slices of tomato

+ 3/4 of an organic avocado

+ zucchini fries

Based on my research, it's among the best out there. It's pretty reasonable (price-wise) on the 'net.

The zucchini fries are very easy to make.

Just slice the zucchini into the shape of a typical French Fry and cook it on the stove in some olive oil. I added sea salt, a freshly ground pepper blend and some red pepper flakes as a topping.

You just need to flip the zucchini strips to brown each side. Just don't burn them like I did!

My wife suggested that I try cooking them in the oven next time. She may be right about that. Only experimentation can tell!

Thank you Mr Harry! I think baking them in the oven would be a great idea. I love zuchini but more often than not end up wasting them in the fridge. I will try to bake them in the oven over olive oil and make a whole batch so I wont dispose of them as usual.

Harry, we make zucchini 'chips' all the time (well, not in a while), cut the zucchini in thin circles. fry and enjoy.

This past weekend we used zucchini slices as the "crust" for a pizza snack. It turned out really well! :-)

It's the tastiest organic coconut oil I've ever tried. I think they manufacture it in a conscientious way. A healthy product indeed. :-)
