Roasted Veggies with Burrata Cheese

Sauteed Shrimp ala Wifey

10:15 am


+ a cup of organic instant coffee (black)

11:45 am

+ LC Coconut Peanut Butter Fribble Shake

1:30 pm

+ a sample of two LC-friendly "superfood" drinks - Greens to Go and Acai Natural Energy Boost

3:00 pm

+ an LC ChocoCoffee

4:30 pm

+ a few bites of pork al pastor (from Whole Foods Market) and a few tablespoons of an Italian spinach dip (blended spinach, garlic, Parmesan cheese and olive oil ... I think)

7:30 pm (pictured above)

+ sauteed shrimp in a garlic and shallot, butter white wine sauce

+ broccolini topped with a little Burrata cheese

Yes. She's doing well but extremely busy with work! It's a crazy time but I'm impressed with how she's determined to stick to her new plan!
