+ a 3x3 from In-n-Out - no bun or sauce

+ 3/4 of an organic avocado

10:30 pm

+ several slices of natural sopressata

+ Italian spinach dip

Here's how I make 'em:

I put 3 ice cubes, a few ounces of coconut milk, 1/2 cup of water, 2 tablespoons or so of peanut butter, a scoop of vanilla protein powder (egg or whey protein), a dash of stevia and Also Salt (salt substitute) into a large glass. Then I blend everything together with my immersion blender. A regular blender would work out well too - just more clean up work afterward.

I think it has a really interesting and satisfying taste to it. I'm of the opinion that coconuts are quite healthy for you. That's part of the reason why I'm using more coconut milk lately - also, coconut milk is cheaper than heavy cream.

Harry - wow, that sounds amaaaazing. When you say immersion blender... do you mean a stick blender?

That's right - a stick blender. It's my favorite kitchen appliance. So handy! :-)

I was just about to ask about your peanut butter coconut shake but you answered my question (did it turn out well?) when you answered Nancy. Innovative! I like the way you think.

I think it's delicious, Oct. It has a familiar taste and yet a surprising element due to the coconutty notes on the backend.
