Lamb Chops w/Stewed Tomato and Roasted Garlic Ahi Tuna Tartare w/ Mixed Greens and Avocado Beef Carpaccio with Arugula, Arthicoke and Parmesano Reggiano
11:00 am+ a cup of black coffee
+ scrambled eggs with provolone cheese and rustic bacon (thick sliced and heavily spiced)
4:00 pm+ a small amount of grilled salmon (2 or 3 ounces) and grilled veggies (eggplant, tomatoes, yellow squash and zucchini) with feta cheese
+ an iced coffee black
+ a handful of raw, organic cashews
8:00 pm (pictured above)+ beef carpaccio with arugula, arthichoke and
Parmesano Reggiano (appetizer)
+ lamb chops with peppercorn sauce, a roasted tomato and roasted garlic (shared)
+ Ahi tuna tartare with mixed greens and avocado (shared)
+ steamed asparagus with an lemon olive oil sauce and sea salt
+ a glass of red wine (

Wow, what a selection of food! I see you are back drinking wine. Were those lamb chops and beef cooked by your wife? It certainly looks more like a restaurant presentation.

We took a two-day mini-vacation to celebrate our anniversary. Luckily for us, there were plenty of LC-friendly gourmet foods to choose from. It was a real treat. :-)

Lamb is super simple to cook. In fact, we were just talking about cooking more of it at home. So simple to make and so delicious. Having said all that, the last two times we've had lamb ... it's been at a restaurant. We love it!

Happy to see you! I've been thinking about you and wondering how you're doing.
I've resumed my red wine routine but generally when we're out for dinner or at a friend's house. I still don't have a glass on a daily basis. I'm at my goal weight now so I feel like I can occassionally loosen up a little and enjoy some healthy foods and beverages that aren't extremely LC.
I'll use my scale/weight as a measure of how much wine and other foods (such as berries) I can consume while maintaining my desired weight (175-180).
All the foods pictured, over the past few days, have been from a mini-vacation we just took in celebration of our meeting and wedding anniversaries. The cooking duties were in the hands of highly skilled professionals. They did good! :-)
