Sunday Dinner


Beef Short Ribs on a bed of Mashed Cauliflower

The photograph's a little fuzzy but the flavor was anything but! Now that's comfort food! We both loved this dish. The meat was so tender. Fall-off-the-bone tender.

Added carbs would have added nothing to this meal.

Did you cook it yourself? If so, can you spare any tips? I've been trying to make my own fall-off-the-bone meat for aaaaages and I've never actually got it :(

Alright, you seem to love the mashed cauliflower. What's your trick to keep it from tasting bitter like it does when I try to make it?

How'd you fix those delish looking ribs, too?

Howdy, Erika.

The trick is actually in the cooking method. We used a slow-cooker.

All we did was buy some well-marbled short ribs and added a few simple ingredients to them in the slow-cooker.

We added a can of diced, organic tomatoes, some fresh, chopped garlic and onion and a little red wine. My wife also spiced it up with some sea salt, fresh ground pepper, cumin and a few fennel seeds.

I think the whole cook time was about six-hours. It's definitely low-heat, slow cooking.

Put that bad boy on a bed of mashed cauliflower and you're in business. Trust me. :)

What I really love about that dish is the broth that remains afterwards. I'm planning on making some simple and delicious low-carb veggie soup with it later this week.

Try using a slow cooker, if you haven't already. They're cheap and super simple to use. If I can do it ... anyone can do it!
