LC Tortilla Chips

OK, so only day 6 and already I was craving something chippy or bready. My friends marvel at how chocolate just sits around my house forever - but a bag of crispy, salty chips? They stand no chance - That's always been my personal downfall.

Anyway - you may have already tried this, but I just discovered that I could cut low-carb tortillas into neat little triangles and fry them in a little oil in a frying pan (I threw a clove of garlic into the oil for a little added flavoring), then salted them while still hot right out of the frying pan. MMM mmmm... Satisfied my need for something salty and pretty crunchy. Can't wait to try them with guacamole or use them to make nachos? (topped w/meat, cheese, sour cream and jalapenos)...

My husband came up with another idea. He thought they'd be delicious sprinkled with some Splenda and cinnamon while still piping hot.

OK - time for the mad LC scientists to hit the sack.

Hello!!

Hi LC Bloggers!

Mrs. Harry here... Just a short note to thank you all for the good wishes and encouragement as I embark on my own LC journey. I was REALLY exhausted for the first few days, probably a combination of carb withdrawal and jet lag. But finally starting to feel good after 5 days.

One thing my very modest husband didn't tell you all is that not only did he lose 80 pounds on his LC program, but he did it while living in a house full of tempting carbs - chips, cookies, crackers, bread, candy - you name it! I was eating anything and everything and in large quantities, I might add. But those days are over. We are now LC partners as well as life partners and it feels really good to finally be on board.

My goal is to lose 40 pounds. I'm not sure I have the iron willpower of my sweet husband, so wish me luck - I'll need it!

We had a really great dinner with my old boss (and her boyfriend) last night. The location was a cozy, family-owned Italian restaurant and both of us managed to enjoy an LC friendly and nutritious meal. This was one of the first times we've eaten together with a shared menu philosophy. My wife and I split a delicious appetizer and then went our own way for our main course and "dessert".

PS - My wife will likely start adding content on here soon. She's swamped with work and trying to catch up after our trip - which was, in part, a business trip for her as well. The good news is that she's been 100% on plan and is loving your supportive comments. Thanks for that! :-)

Our first day back home. It was a whirlwind of unpacking and catching up on work and personal responsibilities. We hit the ground running and have yet to stop!

I have at least two important news items to share with you all:

1. We spent the last week or so in Martha's Vineyard. There's a lot more I'll probably tell you about that in the coming days. But for now, at least you'll know if your guesses were right!

2. My lovely wife has decided to adopt an LC diet to help her lose some weight and improve her health! I'm so happy about this and even more proud of her! This wasn't an easy decision and one that took much time and consideration. I can't wait to see all the benefits she'll undoubtedly find while on this journey. Please join me in welcoming and supporting her to the fullest. I'm sure you'll come to love and appreciate her ... just like I do. Well, almost like I do. ;-)

BTW, my angel may jump in and provide some content on this blog as well. She might occasionally (or often) post her menus alongside mine. Who knows, she could even decide to start up a blog of her own. Only time will tell. :-)

Black, Red and Blue

Rocky, rocky sleep last night. I'm determined to make the rest of the day better.

Update: We "discovered" a really delicious find at Whole Foods Market the other day. I know some of you shop at that chain in your neck o' the woods and I thought you might like to know about it ... if you don't already.

In the fresh meat section there is something called Blue Cheese Turkey Burgers. I believe the only two ingredients are ground dark meat turkey and crumbled blue cheese. They were very, very moist and flavorful. We doctored them up a bit but I'm sure they'd be quite tasty no matter how they're made. :-)

We squeezed in some tennis play this morning. What a fun way to get the body in motion. The good news is ... we didn't lose a ball today! That's got to be a good sign.

+ LC Mocha Ice & Cream Shake - 3 ice cubes, a few ounces of organic heavy cream and 4-6 oz of purified water, 2 scoops of Amazing Grass Chocolate Greens, 1 scoop of Jarrow Unflavored Whey Protein, 1 scoop of organic sprouted flax meal, 1 tsp of organic instant coffee, a splash of organic vanilla extract, stevia and Also Salt - blended up using my handy-dandy immersion blender

5:00 pm

+ a cup of organic, black coffee

7:30 pm

+ grilled salmon and steamed broccoli (dinner at the local casino)

5:00 am (very late night playing cards)

+ an assortment of raw cheeses from Whole Foods Market, sliced salami (natural) and prosciutto (natural)
