My Coconut Oil of Choice

I'm experimenting with making zucchini fries this evening. I picked up a few In-n-Out burgers for dinner and I noticed that I had one lonely zucchini left on the kitchen counter. That's what prompted my culinary inspiration.

I like doctoring up burgers with avocado slices as well. It makes the meal more interesting and healthier as well, IMO.

I'll let you all know how the LC fries turned out later. They smell good. I can tell you that much! :-)

Update: The fries were a little too fried. I think I cooked them for slightly too long. Oh well. At least the apartment didn't burn down! :-)

My New Green Drink

A new week, a new chance to keep steadfast in my commitment to striving for better health. I was hoping for a boost in confidence and morale this morning - as I hopped onto the scale. The results weren't quite what I was wishing for but there was still a sign of improvement, just not in the weight department.

The truth is that I should be much leaner (body fat %) than I currently am. My weight still needs to come down as well. But my goal really should be two-fold - a reduction in body fat and weight.

I also need to remember that I lost a considerable amount last week. Perhaps more than I should be losing over the course of 7 days. Therefore this slow down may just be a reaction to that prior loss.

I'll know more next week. In the meantime, my resolve is as strong as ever. Some days I feel up, others not so much. But I'm sticking to the program. I think if I can continue to do that I should be okay ... maybe better than okay! :-)

Afternoon Update: I worked out today. Distance: 3.7 miles. Speed: 3.5 - 4.0. Incline: 3.5 - 4.0. Time: 60 minutes, 60 seconds. Warm Up & Cool Down: walking to and from the gym.

I feel happy this morning. :-) It's a good way to start the day.

Afternoon Update: I don't know what to attribute it to but I feel fantastic today! Maybe it has something to do with my extended work out yesterday? I just feel more energetic, optimistic and hopeful today.

Anyhow, I mention this for a few reasons: 1) I think I may give the impression that I'm often "down" or struggling with life. That's often true but I hate feeling that way and I feel it's wrong to live life in that manner. 2) I really do hope, in some small way, to encourage anyone who reads this blog. I want to do something positive but at the same time, I want to be real about the ups and downs I go - because I think we all share that in common.

Update #2: The Pizza Boats were a smashing success! They tasted very much like thin crust pizza! Do you know how long it's been since I've had pizza? Me neither! :-)

Leg of Lamb on a Bed of Mashed Cauliflower

So I went on my walk today but I did things a little differently. I treadmilled for 60 minutes and 60 seconds (or 61 minutes, if you like) instead of my usual 45/45 time. I wanted to shake things up a bit. I think mixing up my exercise routine might ultimately make for a better work out and help it not to seem so boring.

Here are my work out stats: Time: 60 minutes, 60 seconds. Incline: 3.5-4.0. Speed: 3.5-4.0. Distance: 3.56 miles. Warm up and cool down: walking to and from the gym.

I'm late with the commentary again. Sorry about that! I did work out today. Each time I exercise, I try to push myself in one way or another. Today that entailed increasing my incline up to 4.0. I try to use good sense however. The last thing I want to do is hurt myself. I also have to keep in mind that I've been out of shape for a long while. The fact that I'm sticking to a consistent work out routine is the most important thing, I think.

Dinner was late tonight. But man oh man did it turn out well. Very satisfying.

Exercise stats: Time: 45 minutes and 45 seconds. Incline: 3.0 - 4.0. Speed: Mostly 3.5 - 4.0. Distance: 2.83 miles. Warm up and cool down: Walking to and from the gym.

120 Days of LC Menus

Our Weekend Date Event

We're getting ready to go to a dance performance. First, we'll grab a bite at a new restaurant (more on that later). Then, the dancing. Details to come.

Update: We attended a 50th anniversary production by the Alvin Ailey dance company. Wow! What incredible dancers!

This is the first professional dance event I've been to. I was truly amazed and in awe of the power and talent of these dedicated performers. It's an experience I won't soon forget.

Today was also an excellent opportunity to enjoy a romantic date with my beautiful wife. We first went to Kendall's Brasserie - a French bistro style restaurant. The food was wonderful (and LC friendly). Then we had a chance to stroll around a little while before the show.

A lovely Sunday indeed. I'm a very lucky fellow! :-)

Two Nights Running :-)

I'm about to head over to the gym. It's cold out and gloomy out right now. My state of mind is amazingly similar to the weather. Maybe my work out will help with that.

I hope you're all having a swell day. I'm trying to make this Friday as good as possible. No giving in. No giving up.


Update:
I just got back from a 45 minute, 45 second treadmill bonanza. Speed: 3.0 to 4.0. Incline: 3 to 3.5. Distance: 2.71 miles. Warm up and cool down: Walking to and from the gym.

Overall it was a slightly less intense work out today. I varied up the speed and incline quite a bit to keep things interesting. The important thing is that this is the completion of my third week of working out. Now all I have to do is to keep on doing this for the rest of my life. :-)

Pork Al Pastor on a Bed o' Mashed Cauliflower

How many of you have self-esteem issues? Have you found that losing weight and getting healthier has improved your sense of self-worth? I'm currently evaluating whether or not that process is happening with me.

I know I feel less ashamed of my appearance. But at this point, I can't really say that my inner-workings have been drastically transformed. I'm still me inside my head, after all.

I never expected that finding some measure of success in my LC diet would be a panacea for all life's ills. The truth is, I guess I was hoping for more. But deep inside I think I knew that a whole other layer of work would be needed if I'm truly going to change my life for the better.

I can say this with certainty: I needed to improve my health as part of any foundation for change. I was a walking ER candidate waiting for my number to be called. The changes I've made in my diet and lifestyle will hopefully buy me enough time to try to change the truly important things that can't be seen in a mirror. Wish me luck, I'll need it.

My Rustic "CocoCocoa"

I have three items of note today.

Numero Uno: I busted my keester to push myself into having my most intense work out in recent history. In the back of my mind, I was wondering if anyone at the gym knew CPR ... just in case.

The stats: 45 minute, 45 second treadmill work out. Incline: 3 - 3.5 (a new high). Speed: mostly 3.7. Distance: 2.84 miles. Warm up and cool down: the walk to the gym and back.

Numero Two-o: I made my very own LC friendly, all-natural, mostly organic chocolate bar. The basic ingredients are listed below. I'm happily surprised to report that it is pretty, pretty good (as Larry David might say).

Numero Three-o: I'm experimenting with a new "super food" mix. I really enjoy the Amazing Grass Chocolate Green Superfood. It tastes great and the ingredients are excellent. But I think I've found something even better. My concern was how it would taste. One look at the ingredients will give you a justification for my impending fright.

Well, I bit the bullet and tried it out. I bought a single serving packet and mixed it with a homemade coffee protein shake. The coffee taste was enough to sufficiently mask the "green" flavor of the mix.

I do believe I'll be switching over to this new product for at least a one month trial. Be on the look out for even more inexplicably odd behavior and shananigans. I look forward to proclaiming, "The ORAC-Energy Greens made me do it!"

In-N-Out 3x3 with Organic Avocado Slices

I'm dragging today. My body feels physically worn out. I think it's a combination of exercising a bit more aggressively and doing some other physical activity around the apartment. But this is not a bad thing at all. It's good to occasionally put our bodies to the test so that they'll become stronger and capable of greater endurance. I know I definitely can use some help in that department. And the only way I know to improve upon that is to keep on upping the bar and pushing my body to gradually become more fit. Fortunately, I also have my pal Java to help me get through. :-)

Sante Fe Catfish and Garlic Broccoli

What happened to the weekend? Someone call the fuzz, the heat, the po-po! My weekend's been stolen! That means it's time to get back on the treadmill (literally) - within the next half-hour or so. But first, I'll update the weight-debate. Will the scale prevail? Or will my blubber turn to Flubber and bounce away?

Update #1: Well, there's good news and not-so-good news. My weight was down about a pound and a half but my body fat was up almost 2%. Odd. I'm not sure what to attribute that to. Especially since I've been exercising. Still, I'm pretty happy with the reasonable amount of loss and I'll continue trying to bring both my weight and body fat down to a more healthful level. The quest continues!

Update #2: 45 minute, 45 second treadmill work out. Incline: 3 (increased). Speed 3.o-3.7. Distance: 2.73 miles. Warm up and cool down: walked to and from the gym.

Onwards and downwards!

I'm about to start work on my writing assignments. In between the typing, I'll also do some of my cooking for the week. I've got a few veggie dishes that need doin'.

I'm not sure what else will come up this weekend. My lovely wife and I both have business to attend to. We'll likely stay home for most of the weekend. Maybe we'll go for a walk tomorrow and probably see the film "Last Chance Harvey" - as I need to review it.

Der 111. Tag

Experiment Gone Bad - LC Double Chocolate Cookies!

It's Friday morning. That means it's my final gym day of the week. I'm going to try to get in a solid work out that will carry through the weekend. It's going to be a "working weekend" of sorts. I have my usual writing assignments plus two side projects that I've committed to: one involves writing a health-related article and the other project will transport me back to my prior profession ... the film business (doing "coverage" on scripts).

I hope you're all making it through this day in the best possible way. I'll try to do the same. Let's keep on the right track and help each other when the times are rough. We can do this!

Update: I did a 45 minute, 45 second treadmill work out today. My speed ranged from a low of 3.0 to a high of 3.7 (miles per hour). The incline remained at 2.5. The distance equivalent was 2.74 miles. As usual, I walked to and from the gym as my warm up and cool down time.

Update 2: I experimented with making a batch of LC cookies tonight. They didn't turn out very well. The consistency was too dry. They weren't sweet enough. And I should have made them smaller/thinner. Oh well. At least the ingredients were all healthy.

Anybody play hockey? I have some leftover cookies that could easily double for hockey pucks. The best news is ... I'll only charge you for the cost of shipping! :-)

I had to take my car in for a periodic servicing today. While waiting, I took a walk around town. I'd say I walked about a mile to a mile and a half. I maintained a casual pace. Just enough to get the blood flowing.

The Day Some Call 109


Our Yummy Dinner

I had a dream/nightmare about binging last night. I don't recall the specifics except that I remember waking up and feeling relieved that it was just a dream.

It's not terribly uncommon for me to feel the temptation to escape by going back to old (self-destructive) eating patterns. These thoughts usually arise when I'm feeling sorry for myself or disappointed about one thing or another. But those times pass and I know that if I give in to those temptations, I'll only end up in a tougher spot. There's only so many tough spots you can dig yourself out of. I've had enough of them in my time and I'm sure life will provide plenty more of them without my assistance.

Update: I just completed a 45 minute and 45 second walk. My inclined remained at 2.5 and my speed increased slightly to 3 - 3.5. That upped my total walking distance to 2.54 miles (on the treadmill). I also walked to and from the gym as my warm up and cool down times.

Sauteed Scallops and Organic Avocado

I've been pretty busy with work and a few side projects. Tonight I tried to change things up a bit by making something unusual for dinner (pictured above). It turned out pretty well. But, I still haven't mastered the art of sauteing scallops. One day that day will come. :-)
